WHAT ARE LOW-CARB JALAPENO CHICKEN DRUMSTICKS?

Jalapeno chicken drumsticks are deliciously marinated in a jalapeno marinade before being grilled or baked.

They are the perfect game-day appetizer, main course addon, or main course all by themselves.

They have a delicious “zing” of spice but not enough that anyone who has an aversion to spicy foods can’t eat them. They are juicy, delicious, and the perfect meal for any time of the year!

JALAPENO CHICKEN DRUMSTICK INGREDIENTS

Before you set out to make these delicious drumsticks, make sure you have the following ingredients on hand first.

  • 1 package chicken drumsticks
  • 2 tablespoons avocado oil
  • 2 cloves garlic, finely minced
  • 2 tablespoons fresh lime juice
  • 1/2 large jalapeno, halved and finely chopped, seeds included
  • 1 1/2 teaspoon kosher salt

After you have all of this, you’re set and ready to go!

HOW TO MAKE LOW-CARB JALAPENO DRUMSTICKS

  1. Mix marinade ingredients in a small bowl
  2. Pour the marinade into the tray and flip the drumsticks so that the tops of the drumsticks are face down in the liquid
  3. Let marinate in fridge at least 4 hours
  4. Once done marinating, remove chicken from marinade. Save the remaining liquid and baste the chicken with it as you’re cooking
  5. Cook on a charcoal/propane grill or indoor stove or grilling pan until cooked through
  6. Eat and enjoy!

ALTERNATIVE COOKING METHODS

If you don’t have an outdoor grill for whatever reason, there are a couple of other ways you can cook these drumsticks.

IN THE OVEN

Since most everyone has an oven, these drumsticks can easily become baked drumsticks.

To do this, you’ll want to follow this alternate set of cooking instructions for baking only.

  1. Mix marinade ingredients in a small bowl
  2. Pour the marinade into the tray and flip the drumsticks so that the tops of the drumsticks are face down in the liquid
  3. Let marinate in fridge at least 4 hours
  4. Once done marinating, remove chicken from marinade. Save the remaining liquid and baste the chicken with it as you’re cooking
  5. Preheat your oven to 425˚F
  6. Place the chicken on a baking sheet and place inside
  7. Baste and check every 15 minutes
  8. Cook for roughly 40 minutes and check for doneness
  9. Eat and enjoy!

ON AN INDOOR GRILL

The other method is to use an indoor grill. Often thought of as a George Foreman grill (for the most part a very different thing entirely), indoor grills are a handy utensil to use in the winter-time or during bad weather.

To use an indoor grill, you’re going to want to follow the same directions as an outdoor grill. However, due to the differences in makes and models, your cooking time can vary widely.

Use your own judgment (and a meat thermometer wouldn’t hurt) when making sure the chicken is cooked through on an indoor grill.
