WHAT IS LOW-CARB MEXICAN CAULIFLOWER RICE?

Low-carb Mexican cauliflower rice is a version of the rice you’re used to getting at Mexican restaurants around the country. The same delicious spices from those restaurants are used to make this recipe extra yummy!

Instead of regular rice, of course, this recipe uses riced cauliflower for a much lower carbohydrate count. This recipe is easy to make, tastes great, and is perfect for anyone looking to have delicious rice dishes but without all the carbs!

This rice is perfect to pair with your favorite Mexican dish, such as zucchini enchiladas!

WHAT IS CAULIFLOWER RICE?

Cauliflower rice is cauliflower florets that have been chopped, food processed, or otherwise turned into a consistency very similar to that of rice. It is a favorite of anyone looking to eat fewer carbs, more vegetables, or a “lighter” diet.

Cauliflower makes a great substitute for white rice. When cooked, it doesn’t have a strong taste and can easily take on the taste of any sauces or spices used in the recipe.

You can now readily find cauliflower rice in grocery stores and supermarkets in pre-packaged containers. There are several brands of frozen cauliflower rice, and you might even be able to find it made in store.

However, its always best to make your own to avoid chemicals and achieve a super fresh taste!

HOW TO MAKE LOW-CARB MEXICAN CAULIFLOWER RICE

  1. Rice the cauliflower
  2. In a skillet over medium high heat, add the avocado oil and riced cauliflower
  3. Add the rest of the ingredients to the skillet
  4. Cook until the cauliflower is cooked through and the mixture begins to stick together
  5. Remove from heat and devour!

CAN I USE PRE-PACKAGED CAULIFLOWER RICE?

You can, but don’t be surprised if you’re not overly satisfied with the result. It has been our experience that pre-packaged cauliflower rice is nothing like making your own.

Frozen cauliflower rice will often turn out mushy after heated and cauliflower rice packaged by the store is usually old and discolored.

So, yes, you can use pre-packaged cauliflower rice. But, the result will be much better if you make it yourself.

STORING MEXICAN CAULIFLOWER RICE

Storing your leftover Mexican cauliflower rice is super easy and simple!

As we always suggest, use glass storage containers for containers that are not only versatile, but can be used in the oven as well.

Obviously, you can use whatever storage containers you may have on hand.

Place the leftovers into the refrigerator where they can stay for 3 – 4 days. If you don’t eat them within that timeframe, it’s probably best to discard them.

Cauliflower rice won’t quite hold up and last as long as regular white rice.

REHEATING LOW-CARB MEXICAN CAULIFLOWER RICE

Reheating your leftover Mexican rice is very easy!

There are multiple ways to accomplish this to make sure your rice stays moist and delicious!

REHEATING IN THE MICROWAVE

The quickest and easiest way to reheat your leftover rice is in the microwave. To do this, simply spoon out the amount you are wanting to eat onto a plate or into a bowl and place it in the microwave.

Microwave the rice on high for 1 minute, stirring at the 30-second mark. Remove from the microwave, check to ensure the rice is heated through, and eat. If the rice needs more time, heat in 15-second increments until it reaches your desired temperature.

If you’re planning to reheat an entire container of cauliflower rice in the microwave, use the same method as above, but increase your cook time.

Still, stir every 30 seconds or so to ensure the rice heats as evenly as possible.

REHEATING IN THE OVEN

Another great way to reheat your leftover Mexican rice is in the oven. By reheating in the oven, you are heating it more slowly and evenly, making for a better result.

To reheat your leftover rice in the oven, preheat your oven to 350˚F. Place however much rice you will be reheating into the oven.

If you’re planning to reheat all of it, you can simply put the entire container (assuming you’re using an oven-safe storage container) in. Otherwise, dish out whatever you plan to reheat and place it into an oven-safe container.

Every few minutes, remove the rice and stir to ensure it is heating through. Continue to heat and stir until it has reached the desired temperature.

Remove from the oven and enjoy!

REHEATING ON THE STOVE

The last method to reheat your low-carb Mexican cauliflower rice is on the stovetop. This way the rice is heated more slowly (like the oven option) and won’t dry it out or make it tough.

To reheat your rice on the stove, put the leftover rice into a skillet or saucepan and place it over medium heat.

Every few minutes, stir the rice. Continue to stir and heat until the rice is heated through and to your personal temperature preference.

Remove from the heat and serve!
