KETO CHICKEN SALAD INGREDIENTS
Before you try to make this recipe, make sure you have the following ingredients on hand.
- 3 lb boneless chicken breasts
- 2 cups chicken stock
- 1 cup mayonnaise
- salt and freshly ground pepper, to taste
After you have all of that, you’re set and ready to cook!
HOW TO MAKE KETO CHICKEN SALAD
- Place the 4 boneless, skinless chicken breasts into a slow-cooker (or Instant Pot with slow-cook function)
- Pour over chicken stock and cook on low for 5 hours
- Remove chicken from the slow cooker and place into a large mixing bowl, leaving stock behind
- Using forks, shred the chicken and place into the refrigerator; chill for at least two hours, stirring chicken occasionally to chill through
- After the chicken is chilled, stir in mayonnaise and add salt and pepper, to taste
- Add any extra ingredients, stirring well to mix
- Eat and enjoy!

Do note, if you decide to use any of these additions, you’ll have to redo the nutritional calculations as they will add calories and in some case, minimal carbohydrates.
A FEW THINGS NOT TO ADD TO YOUR CHICKEN…
While adding things to this recipe is perfectly fine, there are a few things you might be used to in chicken salad that should not be added due to their sugar content.

- Raisins
- Craisins
- Sugar (some recipes call for this to be added)
- Carrots
- Sriracha
WHAT “CRUNCH” CAN BE USED WITH THIS?
Truly, the answer to this is up to you. The easiest and most widely used crunch would be pork rinds.
Of course, if you can find the pork rinds made fresh, they are absolutely amazing!
There are other options out there, such as cheese crisps, and keto crackers. If you have a favorite crunch, either made or bought, use it with this recipe.
There is really no wrong answer here, just use what you like the best!
STORING LEFTOVER CHICKEN SALAD
Storing your leftover low carb chicken salad is super easy and simple!
As we always suggest, use glass storage containers for containers that are not only versatile but can be used in the oven and microwave as well to reheat, if the food calls for it.
Obviously, you can use whatever storage containers you may have on hand.
Place the leftovers into the refrigerator where they can stay for 4 – 5 days. If you don’t eat them within that timeframe, it’s probably best to discard them
