When we ate at Japanese restaurants, we always loved getting the starter bowl of soup, so we decided to make our own keto Japanese onion soup!

Ingredients

  • 6 cups chicken stock
  • 4 tbsp butter
  • 2 medium onions, quartered
  • 2 celery stalks, cut in half
  • 2 large carrots, peeled and quartered
  • 2 garlic cloves, smashed
  • 1 carton mushrooms, sliced
  • 2 green onions, sliced
  • 2 tsp pink Himalayan salt
  • 2 tsp fresh ground black pepper

Instructions

  1. Add all ingredients except green onions (and only 3/4 carton of sliced mushrooms) to your crock pot or slow cooker
  2. Cook on low for 5 - 6 hours
  3. Pour contents of slow cooker through a strainer into a pot or large bowl
  4. Pour liquid back into slow cooker; add chopped green onions and rest of sliced mushrooms
  5. Ladle into a bowl and sip away!
