This low-carb French onion chicken is a delicious dish that combines the rich, tasty elements of French onion soup with chicken.

This particular dish ditches the higher carb ingredients normally found, such as flour for low-carb/keto-friendly xanthan gum.

LOW-CARB FRENCH ONION CHICKEN INGREDIENTS

Before you try to make this delicious onion chicken recipe, make sure you have the following ingredients on hand first.

  • 4 chicken breasts, optionally pounded
  • 2 cups beef stock
  • 4 slices provolone cheese (or cheese of choice)
  • 1 1/2 onions, chopped
  • 1/4 cup avocado oil
  • 4 tbsp butter
  • 1/4 tsp xanthan gum
  • freshly ground black pepper, to taste
  • kosher salt, to taste

After you have all of this, you’re set and ready to cook!

HOW TO MAKE FRENCH ONION CHICKEN

  1. Heat non-stick skillet over medium-high heat
  2. Melt butter in skillet, then add chopped onions
  3. Cook onions until soft and starting to color (10-15 minutes)
  4. Once onions have cooked, remove from skillet; add avocado oil to skillet
  5. Add chicken, seasoning with salt and pepper
  6. Cook chicken until cooked through; remove from skillet and set aside
  7. Place onions back into the skillet with beef stock
  8. Sprinkle in xanthan gum and stir until stock mixture begins to thicken
  9. Once thickened, add chicken and top with provolone cheese
  10. Continue cooking until cheese is melted
  11. Remove from skillet and devour!

One thing you need to decide for this recipe is what kind of onion you should use for this recipe.

We’ve included some notes below on what taste you can expect from what type of onion, but ultimately the decision is up to you on which type to use.

  • sweet onion: mellow and sweet, with a brighter flavor right at the end
  • red onion: deep flavor, with a slightly bitter edge and less sweetness
  • yellow onion: lots of flavor, very mild bitterness, and nice sweet undertones
  • shallot: really good balance of sweetness, with bright flavors and deep, rich flavors, and just a hint of bitterness

HOW TO STORE LEFTOVER ONION CHICKEN

As we always suggest, use glass storage containers for containers that are not only versatile but can be used in the oven and microwave as well.

Obviously, you can use whatever storage containers you may have on hand.

Place the leftovers into the refrigerator where they can stay for 2 -3 days. If you don’t eat them within that time frame, it’s probably best to discard them.

Note: there probably isn’t anything wrong with keeping your leftovers a few more days and the recommendation above is more personal preference of ours. Always use your best judgment when dealing with leftovers.

REHEATING YOUR LEFTOVERS

Reheating your smothered French onion chicken leftovers is very easy. Like with any meat, the method of reheating is very important.

Here are two ways to reheat your leftovers.

IN THE OVEN

The best way to reheat your leftovers is in the oven. Using an oven, you are able to reheat the meat more slowly, helping it to not become chewy or overcooked.

To do this, preheat your oven to 350˚F. Place whatever leftover chicken you’d like to reheat into an oven-safe container and into the oven.

Heat for 10 minutes, then remove and check to see if the desired temperature has been reached.

If not, continue to heat in 3-minute increments until it is as warm as you’d like it. Eat and enjoy!

IN THE MICROWAVE

The fastest and most convenient option is to reheat your leftovers in the microwave. As we’ve discussed before, heating meats in the microwave can leave them tough and chewy.

To combat this, microwave the chicken for smaller increments (around 15 seconds each) and check the temperature each time. When the leftovers reach your desired temperature, remove them from the microwave and enjoy!
