This drink relies on a mix of pumpkin, coconut milk, heavy cream, pumpkin pie spice, and sweetener. Throw on some homemade whipped cream and you’ve got yourself a flavor combination you won’t be able to resist!

HOW TO MAKE A PUMPKIN PIE SMOOTHIE

As you might can imagine, there’s not a lot of work involved in making this delicious drink. In fact, there are three simple steps.

  1. Combine all ingredients together in a blender
  2. Blend until smooth and creamy
  3. Enjoy!

That’s it! Super easy and simple!

SWEETENER OPTIONS FOR THIS SMOOTHIE

Sweetening this milkshake is super easy. There are tons of options for keto-approved sweeteners you can add to your recipes.

POWDERED ERYTHRITOL

Add a teaspoon at a time of powdered erythritol to the drink until the desired level of sweetness is reached. Give the drink a stir after each adds to ensure the erythritol dissolves and mixes.

Since erythritol is only 70% as sweet as sugar, it may take a bit more than you think to get it the sweetness you want. Also, don’t forget that too much erythritol can have some negative (digestive) side effects you probably want to avoid…

LIQUID MONK FRUIT SWEETENER

Another option is using a liquid sweetener, such as monk fruit. Of course, as the ingredient list suggests, this is our suggested sweetener for this recipe. Add two drops at a time of Lakanto Liquid Monk Fruit Sweetener until the desired level of sweetness is reached.

With liquid sweetener, a little bit will go a long way. So, go easy until you get it the way you want it!

OTHER SWEETENER OPTIONS

If there is a sweetener, either liquid, powdered, or granulated that you enjoy that isn’t listed, feel free to use it. This is especially true if you are unfamiliar with either of the options listed above.

WHAT IS COCONUT CREAM?

Coconut cream is basically the same as coconut milk but in a thickened form. The cream has less water content than the milk but has a thicker, paste-like consistency.

Coconut cream is used often in cooking and can be used for a variety of ingredient substitutions, especially for those who are looking to replace dairy in their diets.

The cream is also popularly used as a replacement for whipping cream in dishes that require a cream to create a rich flavor.

You can’t exactly buy coconut cream in your local grocery store or supermarket, but the process to make the cream is very easy. All it takes is canned coconut milk and patience.

Read on below for instructions on how to make your own coconut cream for this delicious recipe.

HOW TO MAKE COCONUT CREAM

Making coconut cream is much easier than you might think. You can’t outright buy the cream, but you can follow these simple instructions and have your own ready within just a few hours.

Don’t worry; the work needed doesn’t equal hours worth of work, or even close.

  • Buy canned coconut milk from your local grocery store
  • Place the can of coconut milk in the refrigerator
  • Leave the can for at least 4 hours; 8 hours or overnight is preferred
  • After the can has properly chilled and the cream has had time to rise to the top, carefully open the can and scoop the cream out
  • Voila! Enjoy the coconut cream!

That’s all there is to make your own coconut cream! So simple and easy!

IS COCONUT CREAM AND CREAM OF COCONUT THE SAME?

They are not the same. Coconut cream, as described above, is a thick cream that is derived from coconut milk containing less water. It is not sweetened but has a mild taste and very creamy texture.

Cream of coconut, however, is a sweetened version of coconut cream. It is used widely in a variety of drinks, main dishes, and desserts throughout the world. The sweetened cream is especially prevalent in Asian and Polynesian cuisine.

You can buy cream of coconut in cans, much like coconut milk. However, it is full of sugar and added ingredients, making it unsuitable for a low-carb, ketogenic lifestyle.

When buying canned coconut milk to make coconut cream, be careful not to accidentally grab a can of cream of coconut. They are often sold in the same aisle of the grocery store, if not side-by-side.

One is wonderfully suited for this recipe and the other is full of sugar.

I am curious as to what happens to the leftover coconut milk in the container. Can it be used after the cream is removed? Can't wait to make this recipe!! Thanks, Sara

Sara,

You can use the leftover coconut milk as a replacement for almond milk or cashew milk. I personally don't love it because I'm not a big fan of the taste of coconut.
