WHAT ARE KETO GRILLED SOUS VIDE PORK CHOPS?

These low carb pork chops are lightly seasoned and cooked using a method called sous vide (explained below). After that, they are grilled on the grill for a delicious chargrilled taste!

They are easy to make, taste wonderful, and are perfect for your next meal! In the spring and summer, you might even want to finish them off with some ketogenic strawberry ice cream bites.

WHAT IS SOUS VIDE?

When using traditional methods of cooking, you don’t have control over heat and temperature. This means it’s very difficult and time-consuming to consistently cook great food.

Sous vide, which means “under vacuum” in French, refers to the process of vacuum-sealing food in a bag, then cooking it to a very precise temperature in a water bath.

This type of cooking utilizes precise temperature control (with circulation, normally) to produce results that you can’t achieve through any other cooking technique. 

Note: if you have a vacuum sealer and would like to use it for this, please feel free. For most people, using Ziploc bags as we suggest is the simplest and easiest way to cook sous vide.

SOUS VIDE PORK CHOPS INGREDIENTS

Before you try to make these delicious and tender pork chops, you’ll want to make sure you have the following ingredients on hand first.

  • 4 pork chops (bone-in or boneless, either)
  • 4 tbsp butter, separated
  • 1/2 tsp kosher salt for each chop side
  • 1/2 tsp fresh ground black pepper for each chop side

After you have all of this, you’re set and ready to go!

HOW TO MAKE GRILLED SOUS VIDE PORK CHOPS

  1. Set your sous vide cooker to 145˚F and let it come up to temperature
  2. Salt and pepper each side of each pork chop
  3. Place each pork chop into a quart Ziploc bag and place 1 tbsp of butter in each
  4. Place the four bagged pork chops into the water bath for 3 hours
  5. After the time has passed, remove the pork chops from the water bath and transfer (bag discarded) to a grill on high heat
  6. Grill on each side until the chops reach the desired level of sear/char
  7. Remove from the grill, cut, and enjoy!

WHAT EXACTLY IS A PORK CHOP?

Let’s take a quick dive into exactly what a pork chop is.

Pork chops are a lean, mild-flavored, and versatile cut of meat. They are taken from the pork loin, which is the muscle that runs from the shoulder to the rear of the pig.

Other loin cuts are tenderloin, baby back ribs, and crown roast.

Thanks to their easy availability and their ease of cooking, pork chops have made a home as a staple dinner in many households.

BONE-IN VS BONELESS PORK CHOPS

Depending on your local options, you might have the option to buy bone-in and boneless pork chops.

Are they really that different?

It might not make much of a difference to you, but here is some quick information on the two different chops.

BONE-IN PORK CHOPS

Bone-in pork chops, aside from the obvious fact they come with a bone, are said to have a “beefier” flavor.

These bone-in chops also contain small amounts of rib meat attached to the bone, which gives them a slightly different texture as well.

More than likely, this comes from the meat still having the bone attached. Bones contain all kinds of delicious tidbits that help to enhance the flavor.

In fact, that’s why bone broth (made by boiling meat bones for hours) is so popular.

When cooking bone-in chops, you also have to ensure that the meat near the bone is cooked. The area around the bone will heat differently than the meat, so it’s important to heat it thoroughly.

BONELESS PORK CHOPS

Boneless pork chops are pretty self-explanatory. They are the meat-only portion of the chop. You don’t have to worry about a bone or anything else with these.

You simply cook, eat, and enjoy.

They are, however, without the small bits of rib meat that a bone-in chop offers.

SO WHAT’S THE ACTUAL DIFFERENCE IN PORK CHOPS?

The real difference comes down to personal preference. If you prefer a bone-in chop because of taste, get one.

If you prefer the ease of a boneless pork chop, use that type.

While there may be actual differences between the two, the only difference that matters is your personal opinion on which you prefer to use.

TYPES OF PORK CHOPS

Besides the boneless and bone-in chops we discussed above, you may also encounter other names when dealing with pork chops.

Some of the names you might see are:

  • Pork rib chops
  • Frenched rib chops (means the rib bones are scraped clean of meat and fat)
  • Center-cut chops
  • Sirloin chops (supposedly more bone than meat and can be very tough and chewy)

I think 145F too high a temp to cook on SousVide with sear at end. I do 139 or 140F at most, then quick sear. Can use grill or cast iron skillet for sear, then let rest. Temp will come up to the 145F then, perfect juicy pork chops.
