Keto cheesy bacon and cauliflower rice is a savory dish consisting of exactly what its name implies: cheese, cauliflower rice, and bacon.

WHAT IS CAULIFLOWER RICE?
Cauliflower rice is cauliflower florets that have been chopped, food processed, or otherwise turned into a consistency very similar to that of rice. It is a favorite of anyone looking to eat fewer carbs, more vegetables, or a “lighter” diet.
Cauliflower makes a great substitute for white rice. When cooked, it doesn’t have a strong taste and can easily take on the taste of any sauces or spices used in the recipe.

KETO CHEESY BACON CAULIFLOWER RICE INGREDIENTS
Before you try to make this cheesy cauliflower rice recipe, make sure you have the following ingredients on hand first.
- 1 head cauliflower, cut into florets
- 1/2 cup mozzarella cheese
- 1/4 lb bacon
- 1 pinch fresh ground black pepper
After you have all of this, you’ll be set and ready to cook!
HOW TO MAKE KETO CHEESY BACON CAULIFLOWER RICE
- In a skillet, cook the bacon until almost crispy
- Remove bacon and set aside, leaving fat in the skillet
- Using a food processor, process the cauliflower florets into a rice-like consistency; pulse button/option is best for this
- Place cauliflower rice into skillet and cook for roughly 10 minutes
- Cut or crush the bacon (should be cooled and somewhat harder at this point) into smaller pieces and add to the rice
- Add the mozzarella cheese
- Remove from heat and serve!
