Store bought mayonnaise is fine and all but... This keto mayonnaise is easy to make, tastes wonderful and has none of the fillers or extra ingredients!
Ingredients
- 1 1/4 cups olive oil
- 1 large egg
- 1 tsp pink Himalayan salt
- 2 tbsp lemon juice
Instructions
- Place the egg, 1/4 cup of olive oil, and salt in a mixing bowl, blender, or food processor; mix thoroughly
- Leaving your selected mixing tool running, slowly add in the rest of the olive oil
- After the mixture has mixed and thickened, add the lemon juice and continue to mix until well incorporated
- Enjoy!

How long is this good for in the fridge?

It should last for a week or two. If you see some separation, you can pour off any liquid or give it a quick blend with a stick blender.

This was the best of the 4 I tried today, and when I messed up by adding the lemon too soon I found an easy fix. Empty the entire mixture into a measuring cup, start with a fresh egg, 2 tbsp oil and dash of salt and couple drops of lemon. After blending until smooth very slowly re-add about 1/2 of your original a little at a time until it thickens properly, then gradually add the rest.

how long is this suppose to be mixed, my mayo is runny.

There is no set mixing time, since each blender/mixer will work differently. It just needs to be mixed until it is fully incorporated and the oil and egg have gotten a thick, mayo-like consistency to them.
