As a lifelong seafood fan, there’s nothing quite like butter with seafood. Give these keto lemon butter scallops a try for an awesome summer meal!

Ingredients

  • 1 lb scallops, rinsed and patted dry
  • 4 tbsp butter
  • 1 tbsp minced garlic
  • 1/4 cup fresh squeezed lemon juice
  • 1 pinch fresh rosemary, chopped
  • fresh parsley, chopped (for garnish)
  • fresh ground black pepper
  • pink Himalayan salt

Instructions

  1. Season scallops with salt and pepper
  2. Add 2 tablespoons butter to a skillet over high heat; melt
  3. Add scallops to the skillet, flipping once; cook until golden brown, about 2 minutes per side
  4. For the butter sauce, melt 2 more tablespoons of butter in the skillet
  5. Add garlic and cook until fragrant
  6. Stir in lemon juice and season sauce with salt and pepper, to taste
  7. Serve scallops immediately with lemon butter sauce and garnish with parsley
  8. Enjoy!
