Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 1/4 cup chopped cilantro
  • 1/4 cup onion, minced
  • 4 tbsp olive oil
  • 2 tbsp butter, melted
  • 2 cloves garlic, minced
  • 2 tsp lime juice
  • 1 tsp chili powder
  • 1 tsp pink Himalayan salt

Instructions

  1. In a small bowl, whisk together 3 tablespoons olive oil, garlic, lime juice, chili powder, salt, and cilantro
  2. Pour over shrimp and mix until all the shrimp are coated
  3. Cover and refrigerate for 20 minutes
  4. In a skillet over medium-high heat, add 1 tbsp olive oil and onions; cook until fragrant
  5. Add shrimp and cook on one side until pink, then flip
  6. Cook until shrimp is cooked through
  7. Drizzle with touch more olive oil and the melted butter, then serve
  8. Enjoy!
