Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into chunks
- 1 can full-fat coconut milk
- 1/4 cup onion, finely chopped
- 2 garlic cloves
- 2 tbsp olive oil
- 3 tsp pink Himalayan salt
- 2 1/2 tsp curry powder
- 1/2 tsp freshly ground black pepper
Instructions
- Toss chicken thigh chunks with curry powder, salt, and pepper
- Heat olive oil in a large skillet over medium-high
- Cook onion until softened
- Using a high-speed blender, blend coconut milk and garlic cloves together
- Add chicken and coconut milk mixture to skillet, stirring occasionally
