Ingredients
- 2 cups heavy cream
- 1/2 cup powdered erythritol
- 1/2 cup cacao nibs
- 1 pasteurized egg yolk
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 1/2 tsp pink Himalayan salt
Instructions
- Using a high-speed blender, blend all ingredients the cacao nibs together for several seconds
- Pour blended mixture into your ice cream maker
- Add cacao nibs
- Let the ice cream maker work its magic and dig in!

I am new with keto and soooo excited to the new taste of a new way of making foods from natural foods. I have made almond cookies and the almond bread. I just hate that I probably will need to count calories. I’m very fine with the carbs, but just the same this is a new exciting way of being truly healthy and keeping my weight and size to a level I can cannnn relax and feel good in my clothes, also there are NO mood swings. My husband is dietetic and he is enjoying the new taste of food too. I have been writing so much information so I will always have the information to re-read and recipes to enjoy as life goes on.
