WHAT IS CARAMEL SAUCE?

Traditional caramel sauce is light to a medium brown sweet sauce made from melting sugar together with butter and heavy cream.

The sauce is used on a variety of sweet treats and is also used as a flavoring ingredient.

Of course, this traditional sauce is full of sugar and carbohydrates. This recipe, however, replaces the sugar with a low-carb approved sweetener to get rid of the nasty carbs.

This recipe is still delicious and makes the perfect topping or added ingredients in tons of sweet recipes!

HOW TO MAKE KETO CARAMEL SAUCE

  1. In a heavy-bottomed saucepan over medium heat, add the monk fruit sweetener
  2. After a short time, the sweetener will begin to melt and turn into a brown liquid; stir constantly!
  3. Be very careful not to heat this too much or it will burn and ruin!
  4. After the sweetener is liquid, add the butter
  5. Keep stirring and up the heat slightly to bring the mixture barely to a boil
  6. After the butter has melted, add the heavy cream and continue to stir
  7. Heat the mixture until it reduces slightly
  8. Remove from heat and stir for another 2 – 3 minutes
  9. Let cool slightly before serving
  10. Enjoy!

HOW TO STORE KETO CARAMEL SAUCE

The easiest way to store your caramel sauce is in an air-tight container, like a Mason jar. Place the sauce in the fridge to keep.

DOES THIS KETO CARAMEL SAUCE NEED TO BE REFRIGERATED?

Yes, you’ll want to refrigerate the sauce. Since it contains butter and cream, this is definitely the safest method of storage.

Of course, storing it in the fridge will make the sauce hard. You can pop it into the microwave for 10 seconds at a time to help soften it again.

Without a rise in blood sugar, your body isn’t signaled to store the food you are eating as fat. This is one of the major factors in carbohydrate-based diets and weight gain.

BUT WHY LAKANTO?

Most sweetener brands use dextrose or another binding agent to attach the sweetener to. These binders can cause a spike in blood sugar, much like regular sugar can.

Because of this, these brands, though using approved sweeteners like monk fruit, are not fit for a keto/low-carb diet.

The taste is there, the texture isn't smooth and creamy like normal caramel. Love the flavor though.
