WHAT IS KETO SKYLINE CHILI?

Skyline Chili is a chain of restaurants around the Cincinnati, Ohio area. The restaurant was founded by a Greek immigrant named Nicholas Lambrinides.

The name “skyline” came from the skyline Nicholas was able to see from his first restaurant in 1949.

Skyline chili is even considered to be the official of many local professional sports teams and venues, including the Cincinnati Reds, Cincinnati Cyclones, Columbus Blue Jackets, and the Kings Island theme park.

Currently, the restaurant chain has 152 locations across four states (Kentucky, Indiana, Ohio, and Florida).

The chili differs from most “main course” chilis because it does not contain beans. Rather, it looks like a “hotdog” chili due to the lack of beans.

The chili is often served over hot dogs, spaghetti noodles, with beans added, and with onions added.

In some areas, you can even buy the chili pre-packaged in super markets. The chili comes either in a can or frozen.

KETO SKYLINE CHILI INGREDIENTS

While keto skyline chili isn’t hard to make, the ingredient list can be a bit daunting. In fact, it is probably one of the more ingredient-heavy recipes on this website.

The spices in this chili are what make it special, so make special note that you have each and every one of them before trying to make this.

You’ll need the following ingredients to make this recipe a success!

  • 2 lb ground beef (70/30 preferred)
  • 2 cups beef stock
  • 2 cups shredded cheddar cheese or grated parmesan cheese, to garnish
  • 1 1/2 cups tomato sauce
  • 1/2 medium onion, chopped

  • 3 tbsp chili powder
  • 2 tbsp garlic, minced
  • 2 tbsp apple cider vinegar
  • 2 tsp unsweetened cocoa powder
  • 1 tsp cumin

  • 1 tsp cinnamon
  • salt and pepper, to taste

Once you have these ingredients rounded up you’re ready to go!

HOW TO MAKE SKYLINE CHILI

To make a pot of delicious keto skyline chili, use the following directions.

  1. In a deep saucepan or pot, brown ground beef
  2. As the beef is almost browned, add garlic and onion and saute
  3. After the garlic and onion are sautéed and beef is browned, add all of the rest of the ingredients
  4. Simmer the mixture uncovered for at least one hour (preferably two) until the mixture begins to reduce and thicken considerably
  5. Remove from heat
  6. Garnish with your cheese of choice, serve, and enjoy!

CAN I MAKE SKYLINE CHILI WITH BEANS?

The simple answer is: no. Beans of all types are not low-carb or keto-friendly and therefore, can’t be added to your cooking.

While yes, variations of skyline chili add beans, it simply isn’t a feasible addition on a low-carb diet. Sorry!

SKYLINE CHILI VS. GOLD STAR CHILI

For those familiar with both, the question might become… Are Skyline Chili and Gold-Star Chili the same?

Each chain has their own secret recipe and seasoning blend. Gold Star is thicker than Skyline, and thanks to its own mix of ingredients, has a flavor all its own.

The easiest way to answer this question is simply that the two are not the same, but are both equally flavorful.

IS REGULAR SKYLINE CHILI KETO-FRIENDLY?

While the exact skyline chili recipe is still a well-gaurded secret (it’s locked in a bank vault, actually) our guess is that no; skyline chili like you can buy in the grocery or in the restuarant is not keto-friendly.

First, a quick search will reveal tons of copycat recipes, and each calls for it’s own amount of sugar, brown sugar, or corn syrup.

Of course, none of those options are keto.

Secondly, since the chili does have a sweet taste to it, we can assume that the original does have an added sugar component.

The processed canned/frozen chili probably has more than the original.

So, while no, we don’t know for sure, it is a good bet the original won’t hold up to low-carb or ketogenic guidelines.

CAN THIS CHILI BE MADE IN A SLOW COOKER/INSTANT POT?

Yes, it can! While this recipe was developed for stovetop preparation, skyline chili can be made in a crockpot or Instant Pot.

Read on below for more information on each preparation method.

SKYLINE CHILI IN A CROCKPOT

To prepare this chili in a crockpot, brown the beef and saute the garlic and onion in a skillet.

Place the beef, onion, and garlic into your crockpot and add the rest of the ingredients. Set to high heat and cover.

Cook for 2 – 3 hours, stirring occasionally, until the mixture begins to thicken. Ladle, serve, and enjoy!

SKYLINE CHILI IN AN INSTANT POT

To begin, set your Instant Pot to “Saute.” Use this setting to brown the ground beef. As the beef is finishing, you can decide whether you’d like to drain off some of the fat before continuing.

Add and sauté the garlic and onion. Add the rest of the ingredients and set your Instant Pot to “Slow Cook” leaving the top off.

Slow cook the mixture, stirring occasionally, until the mixture begins to thicken. The amount of time it takes to thicken will vary.

Ladle into a dish (or over noodles, discussed below), garnish, and enjoy!

CAN THIS BE EATEN OVER NOODLES?

Absolutely! Of course, traditional noodles aren’t an option. If you want to serve your keto skyline chili over a bed of noodles, opt for shirataki noodles.

Shirataki noodles are made from the root of the konjac yam. They are translucent and a great substitution for regular noodles.

Their nutrition content makes them perfect for a low-carb/ketogenic way of eating.

High in non-digestible fiber, they contain roughly 1g of carbohydrates per package.

If nothing else, rinse the noodles well after removing from their bag, and serve hot chili overtop.

Otherwise, prepare the noodles in the way you like best (rinsing is a must!) and enjoy!

@B.J., try substituting Keto Chow Spicy Taco Base, 2 Krazy Ketos has some good chili recipes using it. I am going to play with it for Skyline, but don't know when I'll get the time.

No "white chili" version of this, but you could leave out the tomato sauce. It wouldn't have the same consistency, but is doable.

This was delicious! It even got more flavorful after every day of leftovers. My husband loved it and was quite impressed! We had missed chili since eating low carb starting about 10 months ago. I did add some yellow squash just to have some more volume, and I might add other veggies next time as well.
