Ingredients
- 4 large eggs
- 8 oz cream cheese
- 4 tbsp powdered erythritol
- 2 tsp vanilla extract
Instructions
- Mix all ingredients together in a high-speed blender
- Grab a griddle (or non-stick skillet) and grease with butter or coconut oil
- Pour batter, cook, and enjoy!

When I made the recipe, they did not turn out as expected. They were thin as a crepe, never fluffed up. I added 1/4 cup of my keto pancake mix and the consistency improved a little.

These don't fluff up like a mix or regular pancake does simply because they don't have the extra "pieces and parts" like regular ones. We will have one with almond flour coming out later which is a little more fluffy.
