Pad thai is a noodle dish served all over Thailand. Substitute a few ingredients and you have a bowl of totally tasty keto pad thai!
Ingredients
- 1 lb chicken thighs, cut into small chunks
- 8 oz shirataki noodles
- 1/2 red bell pepper, thinly sliced
- 2 tbsp lime juice
- 2 tbsp Lakanto Golden Monkfruit Sweetener
- 2 tbsp olive oil
- 1 tbsp fish sauce
- 1 tbsp liquid aminos
- 1/4 tsp cayenne pepper
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 1 pinch pink Himalayan salt
- 1 pinch fresh ground black pepper
- 1 green onion, thinly sliced
- *optional* 1 tbsp crushed red pepper (if you're looking for some extra spice)
Instructions
- Mix together lime juice, fish sauce, cayenne pepper, sweetener, and liquid aminos; set aside
- Heat olive oil in a pan over medium-high heat and cook chicken pieces; season with salt and pepper
- Add garlic and pepper midway through
- Move chicken and vegetables to the side of pan; reduce heat
- Scramble eggs in other side of pan
- Add noodles and sauce mixture and mix well
- Heat for 5 minutes to heat noodles; continue to stir to incorporate sauce well
- If using, sprinkle chopped almonds on top
- Add green onion pieces, serve, and enjoy!
