  1. Preheat oven to 375°F
  2. Using a stand mixer or hand mixer, mix all ingredients together until well combined
  3. Form cookies by placing individual spoonfuls of batter on a baking sheet with a silicone baking liner
  4. Place in oven and bake for 15 – 20 minutes; check constantly to ensure they don’t burn
  5. Remove from oven and let cool; they will continue to harden as they cool
  6. Dip in some heavy cream or almond milk for a chocolatey treat!

STORING YOUR LEFTOVER CHOCOLATE COOKIES

Storing any leftovers is super simple and easy! The easiest way is to store any leftovers is in a glass storage container.

We always recommend these containers because they are so versatile for storing and reheating foods. Of course, these cookies don’t need to be reheated.

After baking, let the cookies cool and place them into the storage container. They can be kept on your countertop for 2 – 3 days so you can munch away at any time!

HOW TO MAKE THESE COOKIES CRISPIER

If you want to make your cookies more crispy, you’re going to have to cook them a tad longer. But, just cooking them longer won’t do the trick by itself.

You’ll need to turn down the temperature of the oven to 225˚F and crack the oven door.

Essentially, what you’re doing is drying the cookies at a lower temperature instead of actually cooking them. Cracking the oven door allows the heat of the oven to move across and out, helping the process.

IS IT POSSIBLE TO DIP THESE COOKIES IN MILK?

It certainly is. Of course, you’ll want to make sure you use a low-carb/keto-friendly milk like almond or cashew milk, but it’s certainly possible. Dipping cookies in milk is delicious so why not?

Keep in mind, a quick dunk will work best. Depending on how thick or thin your cookie is, too long and you risk it (just like any cookie) breaking off into the milk.

Could I use sweet drops for the sweetener? I wonder how many drops?

I would start with about 5 drops and taste the batter (before you mix the egg) to adjust sweetness. Then, when adjusted, add and mix the egg.
