When we ate at Japanese restaurants, we always loved getting the starter bowl of soup. So we decided to make our own keto Japanese onion soup!

WHAT IS JAPANESE ONION SOUP?

Japanese onion soup (also called by other names listed below) is a starter soup served in many Japanese and hibachi restaurants around the country. It is not necessarily a traditional Japanese soup, but rather an Americanized version.

Most of the time, the soup is light in color and garnished with sliced mushrooms and green onions.

The purpose of the soup is to prepare the stomach for the rest of the meal, which is considered to be “heavier” (rice, vegetables, and meat).

Every restaurant has its own version of this recipe. Some use chicken broth while others use beef broth. Some even consider the “correct” recipe to be a mix of both.

This recipe incorporates butter of all things to enhance the flavor, add to the fat content, and make the soup delicious.

DOES THIS SOUP HAVE OTHER NAMES?

Yes, it does.

It is sometimes referred to as Miyabi soup, clear soup, or hibachi soup. Depending on the restaurant the name might be different.

It might even just be called “soup” on the menu of your local Japanese restaurant.

KETO JAPANESE ONION SOUP INGREDIENTS

Before you try to make this delicious clear soup, be sure to have the following ingredients on hand.

  • 6 cups chicken stock
  • 4 tbsp butter
  • 2 medium onions, peeled and quartered
  • 2 celery stalks, cut in half
  • 2 large carrots, peeled and quartered
  • 2 garlic cloves, smashed
  • 1 carton mushrooms, sliced
  • 2 green onions, sliced
  • Kosher salt, to taste

After you have all of this, you’re set and ready to go!

HOW TO MAKE KETO JAPANESE ONION SOUP

  1. Add all ingredients except green onions and 3/4 carton of sliced mushrooms to your slow cooker
  2. Cook on low for 5 – 6 hours
  3. Pour contents of slow cooker through a strainer into a pot or large bowl
  4. Pour liquid back into the slow cooker
  5. Add chopped green onions and rest of the sliced mushrooms
  6. Ladle into a bowl and enjoy!

HOW TO MAKE THIS SOUP MORE HEARTY

While individual onion soup recipes may vary, all call for chicken stock, beef stock, or a combination of both.

To make this soup heartier, you have two main options.

ONLY USE BEEF STOCK

The easiest way to make this soup richer and heartier is to use only beef broth. While this recipe calls for chicken broth for a lighter soup, using beef will enhance the flavor.

There’s no need to try and make any conversions. Simply use the same amount of beef stock as listed in the recipe.

It’s really that easy to make this soup much richer and “heavier” if that’s what you prefer.

USE A MEAT STOCK COMBINATION

If you’d like to increase the heartiness but not go full beef stock, you can always mix chicken and beef 50/50.

This will enhance the depth of flavor, but not to the point it changes the overall taste of the soup too much.
