When thinking about keto pumpkin butter, the easiest thing to do is to think apple butter, but pumpkin. Pretty easy, right? Of course, it is. And in truth, that’s exactly what it is.

If you’re like me, you probably didn’t even know this wonderful creation existed. In fact, I saw a version of it in a local publication. A pinch of this, and a pinch of that. Oh yeah, and one cup of sugar and a fourth cup of brown sugar. Yeah… No thanks.

Easy Keto Pumpkin Butter

This pumpkin butter relies on all of your favorite ingredients of fall. Pumpkin and pumpkin pie spice are the main ones I am referring to. Add some wonderful Lakanto Powdered Sweetener and a few other things and we are in business!

When making this, don’t worry about the use of coconut oil. Probably like you, I thought it would solidify when cooled and affect the taste of the butter when cooled. However, this is not the case. It remains well mixed and does not affect the taste when refrigerated.

Do know, some liquid separation is normal as the pumpkin butter cools and rests. A quick stir will take care of this for you and return the mixture to it’s nice and creamy state.

  1. Combine all ingredients into a saucepan over medium heat
  2. Using a whisk, stir the mixture regularly until it comes to a low boil
  3. Cook the mixture for 15 - 20 minutes or until the pumpkin begins to darken slightly
  4. Perform a taste test to see if more sweetener is needed
  5. Pour or ladle mixture into a Mason jar and let cool
  6. Place into the refrigerator until serving
  7. Enjoy!
